If you’re looking for a mouth-watering salad filling enough for dinner, but still lettuce-based (so it at least seems healthy), this is it. Romaine lettuce is topped with marinated and grilled sliced chicken thighs, bacon, tomatoes, avocado, red onions, boiled eggs, and honey-dijon vinaigrette.
Delicious salads must be made with the freshest ingredients that are chopped into bite-sized pieces (especially the greens!). This is my favorite side salad to serve at a dinner party, and contains green and red romaine, sugar snap peas, apples, avocado, slivered almonds, and a high-quality prepared dressing.

It’s a vegan version of the Tex Mex classic tortilla soup, with onions, tomatoes, tortillas, cilantro, chiles, canned pumpkin (that you would never know was there), and creamy chunks of ripe avocado.
