Asian Honey Garlic Chicken Kabobs
Three and a half months in to a global pandemic, socializing with friends indoors or meeting in restaurants isn’t an option. There’s little comfort level for sharing food or even serving utensils. The best way we’ve found to see friends is outside, and sharing food straight off the grill (everyone can grab their own skewers) seems reasonable.
These flavorful kabobs are absolutely delicious and provided a bright moment of entertaining during a long challenging summer.
Garlic Chicken Thighs
This has become a favorite, quick cooking weeknight chicken dish. Cooked on the stovetop and well seasoned with garlic and onion powder, it leaves the oven free for a sheet pan of roasted veggies or Oven Roasted Steak Fries.
Grilled Chicken Cobb Salad
If you’re looking for a mouth-watering salad filling enough for dinner, but still lettuce-based (so it at least seems healthy), this is it. Romaine lettuce is topped with marinated and grilled sliced chicken thighs, bacon, tomatoes, avocado, red onions, boiled eggs, and honey-dijon vinaigrette.
Lemon Herb Avocado Chicken Salad
A bright lemon juice-based salad dressing, which doubles as a marinade for the chicken, is paired with tangy feta cheese and rich avocados and bacon to make this flavorful Romaine-based salad a weeknight winner.
Teriyaki Chicken Salad
We love this flavorful, guilt-free super green cabbage, broccoli, and pea salad topped with juicy teriyaki chicken and dressed with teriyaki dressing. It’s the perfect Monday or Tuesday night meal after a weekend of indulgent eating.
Leesa’s Chicken Fajitas
I keep an eye on my smoke detectors when I cook these fajitas, but they’re worth a little unexpected excitement if you’re having friends over for dinner. Chicken marinated in lime and seared on the stovetop until juicy and delicious perfectly rounds out tortillas filled with shredded cheese and grilled peppers and onions.
To speed things up you can sauté the peppers first, while the chicken is marinating. They’ll have a little less chicken-y goodness, but if you’re hungry, you won’t miss it.
We make these fajitas all the time at home, but the pinnacle was grilling the chicken over a wood fire on our last vacation with friends to Big Bend National Park. I’ve never been so proud of a meal.

We’re always looking for weeknight chicken recipes and really love the combination of five spice powder and orange with these easy chicken thighs.
One-Pan Chicken Burrito Bowls
We’re always looking for quick and easy weeknight dinners that appeal to our preschooler as well as us. With this recipe, you cook the Spanish rice and chicken together, and then add black beans and corn to the same pan (though it’s easy to separate them out for picky eaters who like their food in separate piles). Add more piles of chopped avocado, shredded cheese, sour cream, and salsa, and you’ve got dinner.
Hawaiian Shoyu Chicken
This super-easy, kid-friendly chicken is marinated overnight in soy sauce, brown sugar, and ginger, and then cooked on the stovetop. Serve it with Roasted Edamame.
Jamy’s Thai Chicken Soup (Chicken Khao Soi)
Poach chicken thighs in a broth of homemade curry paste, coconut milk, and chicken broth, add egg noodles and fish sauce, and top with onions, bean sprouts, cilantro stems, chili oil, and lime wedges.
Serve with an Austrian Grüner Veltliner.
