This is the perfect summer salsa thanks to diced fresh pineapple, which is much easier to slice into than I used to think. Red bell pepper and red onion add color, and cilantro, jalapeño, garlic, and lime juice add mouth-watering flavor.
Guy adapted a recipe for corn salsa and served it as an excellent side dish. Canned corn is surprisingly good here, alongside chopped bell peppers, halved cherry tomatoes, jalapeños, a quick dressing, and fresh cilantro.

Purée onions, garlic, bell pepper, cumin, and chile powder. Pour over pork shoulder and cook in a slow cooker for 7 hours. Shred, and serve in tortillas with cabbage, queso fresco, onions, and cilantro.
