Hawaiian Chicken & Coconut Rice
In addition to lending tropical flavor, pineapple helps tenderize meat, and coconut milk adds richness to the rice. Topping both with grilled pineapple makes this a delicious meal.
Butternut Squash Red Curry
This veggie-centric, warming, hearty dish is perfect for cold winter evenings.
Pumpkin Lentil Curry
This quick, cozy, satisfying vegetarian meal made mostly of pantry staples is perfect for New Year’s week.
Sweet Potato-Coconut Curry with Black-Eyed Peas & Collard Greens
We usually celebrate New Year’s Day with friends at the Salt Lick Barbecue, with the traditional cabbage (cole slaw) and pork (ribs), but this was my first year to have black-eyed peas. They symbolize coins, which along with collard greens to symbolize bills, are thought to bring prosperity throughout the year. We can use all the help we can get this year!
Serve with white rice.
Thai Buddha Bowls with Peanut Sauce
After weeks of holiday indulgence, we’re always ready for some post-New Year’s clean eating. This simple bowl of red rice (an earthy whole grain), shredded carrots and cabbage, and edamame is kept interesting with homemade peanut sauce.
Jamy’s Thai Chicken Soup (Chicken Khao Soi)
Poach chicken thighs in a broth of homemade curry paste, coconut milk, and chicken broth, add egg noodles and fish sauce, and top with onions, bean sprouts, cilantro stems, chili oil, and lime wedges.
Serve with an Austrian Grüner Veltliner.
Sweet & Spicy Ground Turkey & Sweet Potato Stew
Ground turkey and sweet potatoes make an adaptable canvas for different flavors. You can easily adjust this recipe to be less spicy, to accommodate kids (but serve it with more chile garlic sauce on the side for heat-loving adults), or to be less sweet.
Slow Cooker Coconut & Green Curry Pork
This 5-ingredient dish takes 15 minutes to set up, and gives you a tender, rich, and spicy pork curry perfect for dinner after a hard day at work.
Mom’s Strawberry Cake
One weekend while we were sharing a house with our roommate, Randy, Mom came to visit and brought this super-moist pink cake. We all loved it, and several months later Randy asked if we could get the recipe and make another one.
Start with strawberry cake made from a boxed mix, soak it with a mixture of condensed milk and coconut milk, and top it with whipped cream.
