We didn’t host Thanksgiving this year, and we were only traveling locally, so we had time in the morning to try a special dessert. These pumpkin pancakes laced with chocolate were easy and delicious. I admit to using more chocolate chips than the recipe called for.
Roasted Butternut Squash Salad
Butternut squash is one of my favorite foods, and I love any opportunity to make it the star of a meal. For this dish, roast diced butternut squash with maple syrup and dried cranberries, and then dress it with a mixture of apple cider vinegar, shallots, and Dijon mustard. Combine with arugula, walnuts, and Parmesan cheese.

Every ingredient in this granola is perfect, especially the ridiculously crispy coconut chips.

Maple syrup and garlic powder add a delicious, unusual touch to roasted salmon.
Mom’s Maple-Bacon Oven Pancake
Stir maple syrup and cheddar cheese into pancake batter and bake in a 13×9″ pan. The combination of cheddar and maple sounds a little strange, but it’s soon good, and this can be easier than making individual pancakes for a group.

Cook quartered sweet potatoes in orange juice and ginger, then toss with maple sugar and butter.
