Soy-Ginger Pork with Noodles & Greens
This dish is pure magic. The broth is amazing, and the warm pork, kale, and noodles are incredibly satisfying on a cold winter evening. We use the pressure cooker, but instructions are included to make this dish in the oven.
Garlic Noodles
Butter, garlic, soy sauce, fish sauce, and Parmesan seems like a funky combination, but it’s a delicious way to dress a side of noodles.
Butternut Lasagna
If you’re looking for a nice, fall- or holiday-inspired main dish, try this vegetarian lasagna. Layers of sliced butternut squash, puréed pumpkin, crème fraîche, fontina, noodles, and sage make this a decadent dish worthy of Thanksgiving or dinner for friends.
Jamy’s Thai Chicken Soup (Chicken Khao Soi)
Poach chicken thighs in a broth of homemade curry paste, coconut milk, and chicken broth, add egg noodles and fish sauce, and top with onions, bean sprouts, cilantro stems, chili oil, and lime wedges.
Serve with an Austrian Grüner Veltliner.
Pork Ramen
This is described as the “everyman’s ramen.” The broth of apples, garlic, ginger, onions, and pork comes together in a few hours. Maruchan ramen, found in every grocery store, is fine, but quality noodles make a big difference.
Curried Udon Noodle Stir-Fry
Stir fry onion, ginger, bell peppers, chiles, and broccoli, and serve over udon noodles with a curry and garam masala sauce.
