Caramelized Onions
Great caramelized onions require slow cooking over medium heat. It takes an hour or more, but the time spent is worth it if you’re looking for a great topping for burgers or pizza.
Leesa’s Chicken Fajitas
I keep an eye on my smoke detectors when I cook these fajitas, but they’re worth a little unexpected excitement if you’re having friends over for dinner. Chicken marinated in lime and seared on the stovetop until juicy and delicious perfectly rounds out tortillas filled with shredded cheese and grilled peppers and onions.
To speed things up you can sauté the peppers first, while the chicken is marinating. They’ll have a little less chicken-y goodness, but if you’re hungry, you won’t miss it.
We make these fajitas all the time at home, but the pinnacle was grilling the chicken over a wood fire on our last vacation with friends to Big Bend National Park. I’ve never been so proud of a meal.
Serve with charro beans.
Caramelized Onion Dip
Last month we had an amazing vacation in Grand Teton National Park and Yellowstone. After a day of hiking around Jenny Lake, we were ravenous and ended up at Signal Mountain Lodge for a very late lunch. We ordered their fried Brussels sprouts and French onion dip, which was better than any onion dip we’d ever had. Served with homemade potato chips, their dip was a creamy base filled with rich caramelized onions, like this recipe we ran across when we got home.
Quick-Pickled Red Onions
The rosy pink color and delicious tang of these pickled onions makes them the perfect topping for barbacoa tacos, sandwiches, or salads.
Slow Cooker Chicken Tikka Masala
This combination of tomatoes, onions, and chicken, mildly scented with garam masala isn’t the most authentic Indian dish, but it’s a welcoming slow cooker meal at the end of a work day.

Caramelized onions, sautéed peppers, and provolone sauce top thinly sliced beef on soft hoagie rolls.
Coq au Vin
Browned pancetta, onions, and chicken simmer with carrots, garlic, tomato paste, bay leaf, and thyme. Reduce the cooking liquid and drizzle over the chicken to serve.
Shredded Pork Tacos
Purée onions, garlic, bell pepper, cumin, and chile powder. Pour over pork shoulder and cook in a slow cooker for 7 hours. Shred, and serve in tortillas with cabbage, queso fresco, onions, and cilantro.
Slow Cooker Ham Bone & Beans
Simmer onions, celery, carrots, bay leaves, and a ham bone in broth in the slow cooker for hours.
