Pineapple Salsa

This is the perfect summer salsa thanks to diced fresh pineapple, which is much easier to slice into than I used to think. Red bell pepper and red onion add color, and cilantro, jalapeño, garlic, and lime juice add mouth-watering flavor.

Ingredients

  • 2 cups diced fresh pineapple
  • 1 cup diced red bell pepper
  • 1/2 cup chopped cilantro
  • 1/4 cup finely chopped red onion
  • 3 Tbs. finely chopped jalapeño pepper
  • 1 clove garlic, minced
  • Juice of 1 large lime
  • Salt, to taste

Directions

In a medium bowl, combine pineapple, red bell pepper, cilantro, red onion, jalapeño, garlic, and lime juice. Stir until well combined. Season with salt, to taste. Serve at room temperature or chilled.
