“Boiling” eggs in an electric pressure cooker gives you consistent results and eggs that are really easy to peel.

- 6 extra large eggs
Pour 1 cup cold water into the pot of an electric pressure cooker. Place the steamer basket in the pot, and add the eggs. Close and lock the lid of the pressure cooker.
Set the pressure cooker to 4 minutes for medium-boiled eggs and 7 minutes for hard-boiled eggs.
Meanwhile, fill a bowl with ice water.
When the cook time is over, do a quick-release to depressurize the pot. Open the pressure cooker and use tongs to transfer the eggs to the bowl of ice water.
Once the eggs have cooled and the water is no longer uncomfortably cold, crack each egg gently on the counter and peel it under the water. Refrigerate in a tightly sealed container until ready to eat.
