Leesa’s Hawaiian Rainbow Jello

During my junior high years, we lived in Hawaii, and I spent most of my time at my BFF Kim’s house. Her mom often made this layered rainbow Jello, and I though it was pure magic.

Now that I have a child, I want to add a little magic to his and his friends’ lives, so I’m excited to have found the recipe.

Ingredients

  • 8 .25-oz. packets of Knox gelatin (2 boxes)
  • 2 14-oz. cans sweetened condensed milk
  • 1 6-oz. box berry blue Jello gelatin
  • 1 6-oz. box lime Jello gelatin
  • 1 6-oz. box pineapple or lemon Jello gelatin
  • 1 6-oz. box orange Jello gelatin
  • 1 6-oz. box strawberry Jello gelatin

Directions

Chill a glass 13x9-inch pan. Coat with cooking spray.

In a 4-cup pyrex glass measuring cup, heat 1 1/2 cups of water in the microwave for 3 minutes or until boiling. Add 3 packets of Knox gelatin, stirring constantly with a whisk, until the gelatin is completely dissolved.

Add 2 cans of sweetened condensed milk and stir well; add a little more hot water as necessary to make a total of 4 cups. Set aside.

In a 2-cup pyrex glass measuring cup, heat 1 1/2 cups of water in the microwave for 3 minutes or until boiling. Add 1 packet of Knox Gelatin, stirring constantly with a whisk, until the gelatin is completely dissolved. Add 1 large box of blue Jello, stirring until completely dissolved. Cool in the refrigerator for 20 minutes, then pour into the chilled 13x9-inch pan. Return to the refrigerator for 20 minutes or until set.

While the first layer is cooling, wash, rinse, and dry the 2-cup measuring cup well; measure out 1 cup of the milk mixture, and make sure that it is cool. Once the blue layer is set, pour the 1 cup of milk mixture slowly over the blue Jello. Return to the refrigerator for 20 minutes or until set.

With each new layer be sure to wash, rinse and dry the pyrex glass very well. Once you put the pan back in the refrigerator to set, if the next layer will be a colored layer, make that flavor of Jello, and then put the measuring cup in the refrigerator until the 20 minutes is up so it can cool.

Alternate layers of colored Jello and milk mixture, making sure that each layer is cool and you return it to the refrigerator for 20 minutes or until it is set before pouring on the next layer. Each time you add a milk mixture layer and return it to the refrigerator to set, mix the next Jello mixture so that it has time to cool.

Add the layers in this order: blue Jello, milk mixture, green Jello, milk mixture, yellow Jello, milk mixture, orange Jello, milk mixture, red Jello.

Once all layers are complete, return the dish to the refrigerator for an hour or until it is completely set.

If during the process your milk mixture starts to gel or thicken, microwave it on the lowest power for 15 to 20 seconds, and stir until it is fluid.
