Grammy’s Porcupine Balls

December 20, 2016

My grandmother had her hands full raising six kids in the 1950s and ’60s, so a lot of her cooking was very simple. (Though her spaghetti sauce recipe is a family favorite.) Dad also remembers her making these meatballs, studded with rice and served with a simple tomato sauce.

Recipe from my grandmother Susan.

  • 2 lb. hamburger
  • 1 cup rice
  • Chopped onion
  • 1 egg
  • Salt and pepper
  • Celery seed
  • 1 can tomato soup
  • 1 can water
  • Dash of catchup (optional)

Combine hamburger, rice, onion, egg, salt, pepper, and celery seed. Form into balls.

In a large skillet, combine tomato soup, water, and catchup. Add meatballs and simmer for one hour.
