Italian Pork Noodles

This was the first meal I ever cooked in my own kitchen. The day I moved from Mom and Dad’s house to my college apartment, I made this pasta for dinner. I must have been pleased to have my own kitchen, since I was willing to cook a meal after moving all day.


  • 1 lb. boneless pork loin cut into 1-inch cubes
  • 1/2 tsp. olive oil
  • 1 small chopped onion
  • 1 14.5-oz can diced tomatoes
  • 1 tsp. Italian seasoning
  • hot cooked noodles to serve four


Stir-fry pork loin cubes, and onion, in 1/2 tsp. vegetable oil. Stir in diced tomatoes and Italian seasoning. Cover and simmer for 10 minutes. Serve over hot cooked noodles.
