Pasta with Chicken & Peppers

Sauté chicken seasoned with Cajun seasoning with bell pepper strips and onion. Add prepared spaghetti sauce, and serve over pasta.

I created this dish in college when expecting a guest at my apartment. Fortunately my guest never showed up, so I got to have seconds.

Ingredients

  • 1 green bell pepper
  • 1/2 medium onion
  • 1 lb. boneless, skinless chicken breasts
  • Cajun seasoning
  • 1 Tbs. olive oil
  • 1 large jar commercial spaghetti sauce
  • 16 oz. vermicelli

Directions

Slice pepper into strips. Chop onion. Trim fat from chicken, and cut chicken into strips.

Rub Cajun seasoning into chicken strips. Sauté chicken in olive oil over medium high heat until browned. Add onions and peppers.

Add spaghetti sauce to chicken-pepper mixture. Cover and simmer over reduced heat for 20 minutes.

Serve over hot vermicelli with Parmesan cheese.
