Easy Pork Carnitas

Tender diced pork tenderloin seasoned with chili powder, cumin, orange juice and lime juice, is a fast and easy weeknight dinner.

Ingredients

  • 1 lb. pork tenderloin, cut into 1/2-inch pieces
  • 1 tsp. kosher salt
  • 1/2 tsp. freshly ground black pepper
  • 2 Tbs. canola oil
  • 1/2 medium sweet onion, diced
  • 3 cloves garlic, minced
  • 1 tsp. chili powder
  • 1/2 tsp. ground cumin
  • 3 Tbs. freshly squeezed orange juice
  • 1 Tbs. freshly squeezed lime juice

Directions

Season pork with salt and pepper.

Heat canola oil in a large skillet over medium high heat. Add pork, onion, garlic, chili powder and cumin. Cook, stirring often, until pork has browned, about 8 to 10 minutes.

Stir in orange juice and lime juice, scraping any browned bits from the bottom of the skillet. Cook until reduced, about 2 minutes. Remove from heat; season with salt and pepper, to taste.

Serve in warmed tortillas or over rice with diced onion, black beans, corn, lime wedges, cilantro, or whatever toppings you'd like.
