Ham and Potato Casserole

Layer ham, potato slices, and onion in a dish, cover with cream sauce, and bake until bubbly.

Ingredients

  • 2 to 3 cups cooked, cubed ham
  • 3 potatoes, peeled and sliced 1/4" thick
  • 1 to 2 large onions, peeled and sliced into rings
  • 4 Tbs. margarine
  • 4 Tbs. flour
  • 2 1/2 cups milk
  • 1 tsp. salt
  • White pepper, to taste
  • 1 tsp. dry mustard
  • 1 tsp. Worcestershire sauce

Directions

Preheat oven to 350º.

Grease 2-quart casserole dish with high sides. Layer ham, potato slices, and onion rings until all are used.

Melt butter in a large saucepan over low heat. Add flour, 1 Tbs. at a time, until mixture is the consistency of a paste. Add milk, a few tablespoons at a time, mixing well between each addition, until all milk is added. Add remaining ingredients. Stir over medium-low heat until thickened.

Pour sauce over potatoes, ham, and onion. Dust with paprika. Bake for 1 hour or until bubbly.
