Sheet Pan Garlic Butter Salmon

This easy but impressive dish makes the perfect dinner to serve to company. Parboil baby red potatoes, and roast alongside long green beans and salmon slathered in garlic herb butter.

Ingredients

  • 1 lb. baby red potatoes
  • 2 lb. salmon
  • 8 oz. green beans, trimmed
  • 2 Tbs. olive oil
  • 3 cloves garlic, minced
  • Kosher salt and freshly ground black pepper, to taste
  • 2 Tbs. chopped fresh parsley leaves

Garlic Butter Sauce

  • 1/2 cup unsalted butter, melted
  • 1 Tbs. brown sugar
  • 1 Tbs. lemon juice
  • 4 cloves garlic, minced
  • 1/2 tsp. dried oregano
  • 1/2 tsp. dried thyme
  • 1/2 tsp. dried rosemary
  • Kosher salt and freshly ground black pepper, to taste

Directions

Bring a large pot of salted water to boil. Preheat the oven to 400ยบ. Lightly oil a baking sheet or coat with nonstick spray.

In a small bowl, whisk together butter, brown sugar, lemon juice, garlic, oregano, thyme and rosemary; season with salt and pepper, to taste. Set aside.

In the pot of water, cook potatoes until parboiled for 12 to 15 minutes; drain well.

Place potatoes, salmon and green beans in a single layer onto the prepared baking sheet. Drizzle green beans and potatoes with olive oil and sprinkle with garlic; season with salt and pepper, to taste.

Spoon the butter mixture over the salmon.

Place into oven and cook until the fish flakes easily with a fork, about 16 to 18 minutes.

Serve immediately, garnished with parsley, if desired.
