Sweet & Spicy Ground Turkey & Sweet Potato Stew

Yield: 4 to 6 servings Active time: 30 minutes Total time: 50 minutes March 11, 2013

Ground turkey and sweet potatoes make an adaptable canvas for different flavors. You can easily adjust this recipe to be less spicy, to accommodate kids (but serve it with more chile garlic sauce on the side for heat-loving adults), or to be less sweet.

Recipe adapted from Kalyn’s Kitchen.

Ingredients

  • 1 to 1 1/4 lb. ground turkey
  • Olive oil
  • 1 onion, chopped into 1/2" dice
  • 2 large sweet potatoes, peeled and cut into 1" pieces
  • 1/2 cup low-sodium soy sauce*
  • 1/2 cup chicken stock
  • 1/3 cup sugar
  • 2 Tbs. brown sugar
  • 2 to 3 Tbs. chili garlic sauce
  • 2 tsp. minced ginger
  • 2 tsp. minced garlic
  • 1 can light coconut milk
  • 1/2 cup green onions sliced in 1 inch pieces, plus more thinly sliced green onion for garnish
  • Cooked white or brown rice for serving, optional

*Regular soy sauce will be too salty. If you don't have low-sodium soy sauce, reduce the amount of regular soy sauce you use.

Directions

Heat 2 tsp. olive oil in a stock pot and brown the ground turkey, breaking it up with the turner as it cooks. This may take 7 to 8 minutes, but don't rush this step. Remove the browned turkey to a plate. Add 1 tsp. more olive oil, if you need it, and sauté the onions until they are soft and lightly browned, about 4 to 5 minutes. Return the turkey to the stock pot, and add the sweet potatoes.

Mix together the soy sauce, chicken stock, sugar, brown sugar, chili garlic sauce, minced ginger, and minced garlic; add to the stock pot. Cook about 20 minutes, or until the sweet potatoes are done and starting to fall apart just a little.

Once the sweet potatoes are done, add the coconut milk and green onion pieces; turn the heat to low, and cook 10 minutes more. Serve hot, with brown or white rice, and garnished with green onions.
