This flavorful rice with cilantro and lime juice is prepared in a pressure cooker, which allows you to start the cooking process and walk away to focus on other dishes. It pairs well with chicken fajitas and charro beans.

- 2 cups jasmine white rice or long grain white rice
- 2 1/2 cups water
- 3/4 tsp. fine sea salt or 1/2 tsp. table salt
- 2 Tbs. fresh lime juice (juice from 1 lime)
- 1/2 cup chopped cilantro
Pour the rice, water, and salt into the pressure cooker pot and stir.
Lock the lid and pressure cook on high pressure for 4 minutes. Let pressure come down naturally for 10 minutes, then quick-release any remaining pressure in the pot.
Fluff the rice with a fork, then stir in the lime juice and chopped cilantro. Serve.
