Roasted veggies are usually part of our weeknight meals, and roasted broccoli is one of our favorites. Toss small broccoli florets with olive oil, salt, and pepper, and roast at high heat for 15 minutes.

- 1 bunch broccoli (about 4 cups), cut into small florets
- 1/4 olive oil
- Salt and pepper to taste
Preheat oven to 450°. On a foil-lined, rimmed baking sheet, evenly toss the broccoli with olive oil and salt. Roast for 15 minutes, until the broccoli is slightly sizzling and the tips are browned, but not black.
