Guy’s Shrimp Risotto with Peas, Lemon, & Pecorino
Patience is one of Guy’s virtues, as is generosity. Throw in a sense of adventure in the kitchen, and you’ll find someone who makes great risotto. He made this risotto for Valentine’s Day and then again when we invited another couple over for dinner and ping pong. The combination of creamy rice, shrimp, peas, lemon zest, and pecorino cheese is hard to forget.
Rick Bayless’s Black Bean Soup
Black beans are seasoned with chorizo, fennel, onion, and chipotle chiles, cooked for hours, and then puréed and topped with shrimp, crumbled tostada chips, and queso fresco.

My cousin Laure lives on the gulf coast. As my grandmother got older and less able to cook a Thanksgiving feast for the family, Laure started a new tradition. She would prepare seafood dishes like this one and take them to Grandma’s to serve the family. We now congregate at her house every year.
This stew of tomatoes, onion, celery, okra, and shrimp is thickened with a roux and seasoned with Old Bay, thyme, bay leaves, and garlic.

My friend Ali served this delicious Thai green curry for a Top Chef watch party. Kaffir lime leaves, fish sauce, coconut milk, fish stock, and Thai basil pack a flavorful punch.

Shrimp & Grits with Roasted Red Bell Pepper
In 2006 I vacationed with my cousin Laure at her condo on the beach, where we made this dish. Garlic, green onions, and fresh thyme are sautéed in butter and then simmered with the grits, chicken broth, and a bit of heavy cream. Roasted bell peppers, feta cheese, and shrimp finish the dish. That day we used Royal Reds, a deep-water variety of shrimp found in the Gulf.
Red Snapper Stew
This is one of the first dishes that Guy and I made together. You coat the fish with a paste made from garlic, parsley, and spices. Sauté onion and bell peppers in butter, add diced tomatoes, and then the fish, shrimp, and okra. Simmer until done and serve with rice.
