Mom’s Cheeseball Snack Mix

Yield: 6 cups Active time: 15 minutes Total time: 1 hour 15 minutes February 28, 2003

Mom often had a tub of this snack mix ready for weekend visits. She’d mix cashews, cheeseballs, Chex, and seasonings, and bake until it was irresistible.

Ingredients

  • 1 1/2 cups salted cashews
  • 1 cup crisp cheeseball snacks*
  • 1 cup corn Chex**
  • 1 cup rice Chex**
  • 1 cup miniature pretzels
  • 1 cup chow mein noodles
  • 1/2 cup butter or margarine, melted
  • 1 Tbs. soy sauce
  • 1 tsp. Worcestershire sauce
  • 1/2 tsp. seasoned salt
  • 1/4 tsp. chili powder
  • 1/4 tsp. hot pepper sauce

Directions

Preheat oven to 250º.

In a bowl, combine the cashews, cheese balls, cereal, pretzels, and chow mein noodles. In another bowl, combine the remaining ingredients. Pour over cereal mixture and toss to coat. Transfer to an ungreased 15x10x1-in. baking pan. Bake at 250º for 1 hour, stirring every 15 minutes.

* The recipe was tested with Planter's Cheeze Balls, but I had a hard time finding them, so I used Cheese X's and O's.

** Instead of buying 2 boxes of cereal, I found the cereal that is rice chex on one side and corn on the other and used 2 cups of it.
