Meat Loaf

Yield: 6 servings Total time: 1 hour March 8, 2003

We never had meatloaf when I was growing up. I adopted this recipe for a few years in my early twenties.

Ingredients

  • 1 1/2 lb. ground beef
  • 1 onion, chopped
  • 3/4 cup breadcrumbs
  • 2 carrots, finely grated
  • 2 eggs, beaten
  • 1/2 cup brown sugar
  • 1 Tbs. worcestershire sauce
  • Salt to taste
  • Pepper to taste
  • 8 oz. tomato sauce
  • 6 oz. tomato paste

Directions

Preheat oven to 350º. Combine all ingredients except tomato paste. Put into loaf pan. Spread tomato paste evenly over top. Bake for 1 hour.
